Wines
Our vineyards are located in the territory of the famous and prestigious Chianti Classico and cover a total surface of almost 7 hectares (about 7 acres). Vineyards are cultivated both with red berried grapes (Sangiovese, Cabernet Sauvignon, Canaiolo and Colorino) and with white berried grapes (Trebbiano Toscana and Malvasia Lunga del Chianti).
The wine production is carried out in a way to respect traditions and environment: the careful care of vines, the manual harvesting of grapes, the meticulous selection of grapes and the constant control of the production process by qualified enologists, ensure a high quality wine.
Pensieri’s area has a mild and warm climate and rainfall is about 700 mm per year, mainly in autumn and in springtime. The alluvial soils, due to the proximity of the Arbia river, have a high percentage of sodium and a fairly high pH which favor the creation of a more delicate wine with fruity notes than in other areas of Chianti.
Depending on the type, our wine is aged in high quality French oak barrels or in stainless steel tanks.
CHIANTI CLASSICO DOCG
Grapes: Sangiovese
Age of vineyards: 25 years
Altitude: 250/300 m
Vinification: in temperature-controlled cement vats with frequent
but brief pumping over.
Ageing: 12 months in French oak barriques and tonneaux of 2nd and 3rd passage.
Organoleptic characteristics: Intense ruby red with purple hues, the nose shows notes of blackberry and undergrowth. On the palate it is enveloping, round and savoury, with a vanilla finish accompanied by a good acid note.

IGT TOSCANA RED
Grapes: Cabernet Sauvignon Age of vineyards: 20 years Altitude: 250/300 m
Vinification: in temperature-controlled cement vats with frequent but brief pumping over.
Ageing: 24 months in French oak barriques of 1st and 2nd passage.
Organoleptic characteristics: Intense ruby red with purple reflections, the nose immediately reveals notes of green pepper and liquorice. On the palate it is soft with evident notes of ripe fruit and vanilla.
CHIANTI CLASSICO RISERVA
Grapes: Sangiovese and Cabernet Sauvignon
Age of vineyards: 25 years Sangiovese, 20 years Cabernet Sauvignon
Altitude: 250/300 metres above sea level
Vinification: in temperature-controlled cement vats with frequent but brief pumping over.
Ageing: 18 months in French oak barriques of 1st and 2nd passage.
Organoleptic characteristics: Intense ruby red with garnet reflections, the nose shows notes of red fruits, spices and vanilla. Delicate but full-bodied on the palate, with a lingering aftertaste.


IGT TOSCANA WHITE
Grapes: Malvasia Lunga del Chianti Age of vineyards: 50 years Altitude: 250 metres above sea level
Vinification: maceration on the skins in cement vats.
Ageing: in porcelain amphora with weekly botonnage for 4 months.
Organoleptic characteristics: Amber yellow, on the nose there are clear notes of citrus and yellow flowers. On the palate it has good acidity, body and a slight tannic note
Extra virgin olive oil
Sensorial Profile:
Oil with medium intense fruitiness, with balanced notes of bitterness and pungency.
The scent of green olives and fresh grass give it a delicate and harmonious taste.
The varieties cultivated are those typical of the local tradition: Frantoio, Leccino, Moraiolo and Pendolino.
